Kids will learn how to make pasta dough from scratch for a handmade Tuscan style pasta called Pici. Pici is a thick, hand-rolled pasta similar to a thick spaghetti. This recipe requires no pasta machine, no rolling pin—just your child, their hands, and a willingness to get a little messy.
What you will need for class:
For the pasta dough:
-1 cup all purpose flour + more for rolling out the dough
-2 eggs, at room temperature
-1 teaspoon salt
-1 tablespoon olive oil
-Suggested add-ons: olive oil or butter, grated parmesan, fresh herbs like basil or parsley, fresh cherry tomatoes or jarred tomato sauce
-Equipment: mixing bowl, measuring cups/spoons, fork for mixing, cutting board, knife or pastry/pizza cutter, large pot of water for cooking pasta, colander, bowls for serving
